A classic daifuku made bite-sized, made from glutinous rice flour (i.e. mochi flour) and stuffed with red bean filling.
In Japanese, Daifuku literally means 'great luck', and is often gifted to family and friends during festivals.
Maker: Adachi Seika (Gifu Prefecture)

Ingredients: Sugar, bean paste, millet jelly, rice cake powder preparation (rice cake powder, sugar), starch / trehalose, processed starch, emulsifier (contains milk)
"Kurumi' means walnut in Japanese. Unlike daifuku, mochi usually do not contain a filling.
This kurumi mochi is a soft rice cake interspersed with with crunchy walnut bits.

Monaka means “the shape of full moon”, and is said to have originated from Takemura Ise, a confectionary shop in Yoshiwara during the mid-Edo period.
This monaka is made from sweet chestnut filling, encased with a soft wafer made from mochi.

The Adzuki Monaka is made from two light fluffy, crispy wafers with a red bean filling,
It contains a soft, chewy mochi centre that pairs perfectly with the texture of the red beans.

A savoury rice cracker encased in a crispy, umami-filled seaweed wrap (nori).
This senbei is made from glutinous rice flour and seasoned with a slight hint of wasabi.

Ingredients: Glutinous rice, vegetable fats and oils, seaweed, salt, starch decomposition products, sugar, assorted seasoning powder, chilli peppers, wasabi leaves, garlic powder, spice extracts, seasonings (amino acids), modified starch (contains glutinous rice, soybeans and chicken)
This senbei is painstakingly made by frying glutinous rice flour, coating with a glaze of seasoning, and then being fried again.
The result is a delicious, savoury crispy cracker, with out-of-this-world flavour.

A massive senbei cracker flavoured with actual sea urchin (uni) and made from uruchi rice, you can almost taste the sea with each bite.

A rice cracker made from glutinous rice flour, this Teriyaki senbei is fried and coated with a sweet and savoury teriyaki glaze that explodes with umami.

A wagashi classic, Youkan is a sweet jelly made with red bean paste (ogura), agar powder and sugar. It is a popular summer snack in Japan.

While the classic Youkan is made from adzuki bean, Youkan today comes in various flavours like chestnut, sweet potato and various tea flavours. This Matcha-flavoured Youkan is one example.

Taiyaki is a fish-shaped pastry, named after sea bream ('tai'). It is a popular winter snack in Japan.
Puku Puku Tai is a variation of traditional Taiyaki, made with chocolate filling encased with a light, crisp wafer.

"Anpai" is a Japanese snack made from a crumbly pastry exterior, and filled with red bean paste ('ogura').
This is a variation of the more well-known "Anpan", which replaces the pastry exterior with bread.
